The two controls that actually protect the label

The first control is source separation at the plant. Ask how the manufacturer schedules allergen-containing and allergen-free production, what changeover and cleaning validation is used, and whether dedicated equipment, ducting or rooms exist. Verify with swab or rinse results rather than a statement alone. The second is supply-chain documentation: a site-specific allergen statement, a cross-contact risk assessment, and the allergen list of every carrier, enzyme and aid used.
