How must soy, wheat and walnut peptides be labelled for allergens?

Short answer: Soy, wheat and walnut are all recognized allergens that must be declared in the major markets, and a peptide made from one of them is still that allergen for labelling purposes. Hydrolysis shortens the protein and can reduce IgE-binding, but it does not remove the obligation to declare the source. In the United States the ingredient statement must name the source in plain language, in the EU and UK the source must appear in the ingredients list and be emphasized, and other markets have their own lists and formats. Declaring the source, keeping the wording aligned with the current regulation, and controlling cross-contact are the duties that follow.
Why the source name still has to appear
Allergen labelling law is written around the source of the ingredient, not its molecular size. A soy protein peptide is derived from soy, a wheat gluten peptide from wheat, a walnut peptide from walnut. Each source sits on the regulated allergen lists of the main importing markets, so the finished product has to declare it.

Wording that satisfies the main formats
- United States. Name the source in the ingredient statement using the common or usual name - for example "pea protein, soy protein hydrolysate" or "hydrolysed wheat protein (wheat)". Parenthetical naming after the ingredient is a common and accepted style.
- European Union and UK. Show the allergen clearly in the ingredients list and emphasize it, typically in bold or capitals. A separate "contains" line can supplement the list but does not replace it.
- Canada. Use the prescribed allergen source names; wheat and soy are both on the Canadian list and walnut appears among tree nuts.
- Other markets. Many follow the same principle with a local list. Check the current list for the destination market before artwork is signed off.
Reduction is not removal
Hydrolysis cuts the protein into smaller fragments. Some IgE-binding epitopes sit inside the folded structure and are disturbed by that cleavage, so reactivity can fall. Others are linear, survive hydrolysis and remain recognizable. A hydrolysate may therefore look less reactive than the intact protein in some assays while still posing a risk to a sensitized person. The label obligation stands regardless of hydrolysis level, and no responsible supplier should claim that a soy, wheat or walnut peptide is allergen-free.
Cross-contact and advisory statements
Even where a peptide carries no declared allergen of its own, shared equipment and shared air handling can introduce one. Segregation, validated cleaning and dedicated lines are the usual controls. If cross-contact cannot be excluded, an advisory statement such as "may contain" is used in some markets; it is a risk communication, not a substitute for allergen management.
Verification steps before artwork is released
- Obtain the supplier allergen statement for the exact grade and manufacturing site.
- Confirm whether the material is a single-source hydrolysate or a blend, since blends add every source to the declaration.
- Check the carrier and any processing aids, which occasionally introduce a second allergen.
- Match the declaration wording to each destination market rather than reusing one label globally.
