Short answer: Most plant protein peptides are naturally free of gluten, because pea, rice, corn and soy contain no gluten proteins to begin with. Wheat, barley and rye do contain gluten, so a wheat peptide is the exception and needs its own gluten-free assessment rather than an assumption. Two things decide the finished claim: whether the source contains gluten at all, and whether gluten was introduced through shared equipment, shared air handling, carriers or a multi-source blend. A gluten-free statement should therefore be supported by the source, the plant's cross-contact controls and test results on the actual grade, and it must meet the threshold defined in each market of sale.
Gluten comes from specific cereals
Gluten is a storage protein fraction found in wheat, barley, rye and their crossbreeds such as triticale, plus related cereals such as spelt, kamut, emmer and farro. Other plant protein sources do not contain it. Pea is a legume, rice is a grass, corn is a cereal but not a gluten-containing one, and soy is a legume. A peptide made from any of those brings no gluten into a formula, and the same is true of potato, chickpea, faba bean and hemp proteins.

Cross-contact is where good positions are lost
- Shared lines. A plant that also runs wheat hydrolysate can leave gluten residues in dryers, mills, sifters and conveyors. Cleaning must be validated for the specific allergen.
- Shared air. Dust from a wheat or barley process can travel through a shared dust collection or air handling system.
- Carriers and blends. A multi-source blend that includes wheat contributes gluten even though the pea component does not; maltodextrin, flavour systems and aids may also carry traces.
- Packaging and storage. Reused bulk bags, silos and totes are a classic source of carryover.
- Finished-product additions. The gluten-free status of the finished item depends on every other ingredient and on the fill or blending line, not only on the peptide.
Thresholds and how to evidence the claim
Gluten-free is a regulated claim with a numeric threshold, conventionally described as no more than 20 mg/kg of gluten in the European Union and UK, and a comparable US definition built around the absence of gluten-containing grain or processing to remove gluten and stay under the defined level. Other markets set their own values. Evidence usually combines the source declaration, the site's allergen control documentation and analytical results on the finished ingredient, with the method chosen appropriately for hydrolysed protein: a sandwich ELISA can under-report fragmented gluten, so a competitive or otherwise validated method is more suitable for a wheat-derived material.
Practical steps for a gluten-free position
- Choose a source that contains no gluten if the claim is central to the product, rather than trying to prove removal from a wheat peptide.
- Ask how gluten-containing and gluten-free production is scheduled and how cleaning is validated and verified.
- Request a site-specific statement for the exact grade, plus the allergen status of every carrier and aid.
- Decide whether ongoing testing is required and, if so, specify the method, the limit of detection and the sampling plan.
- Review the finished formula and packing line, and confirm the current threshold for each market of sale before artwork is finalised.
