What is gelatin used for in gummies?

Short answer: In gummies, gelatin does three jobs. It builds the gel network that gives the candy its springy, chewy bite and clean shine; it sets quickly so the warm syrup can be deposited and demoulded on a fast production line; and once set it holds its shape and texture stable on the shelf for many months. Getting these right is about choosing the Bloom strength, the dosage and the processing so the finished bite matches the brand.
Three roles, one ingredient
A gummy is a concentrated sugar and glucose syrup mass, brought from a hot liquid to a cold, elastic gel. Gelatin sits at the centre of that change of state:

Why texture is really a network story
Gelatin works as a protein. When hot dissolved gelatin cools, its chains start to re-form the collagen-like helical structure and tangle into a three-dimensional network that traps the surrounding sugar syrup and water. The strength of that network — basically how many crosslinks form — is what a gummy manufacturer measures through the Bloom value. A typical soft gummy runs around 220–280 Bloom so the piece is firm enough to hold its shape yet still elastic, so it bounces back rather than snapping cleanly when bitten.
Because the syrup is heavily loaded with sugar, the finished water activity is low. That low water activity, combined with the gelatin network, is what stops gummies from weeping, sweating or sticking together on the shelf.
What actually changes the bite
In practice the same gelatin can make a very soft or a much firmer candy, because the dosage and the rest of the formula decide the result:
- More gelatin, higher Bloom — a harder, more rubbery chew that holds deep imprint detail.
- Less gelatin, lower Bloom — a more tender, jelly-like piece that is easier to bite through.
- Higher sugar solids — hardens the network further; the confectioner balances solids against gelatin to avoid a tough or brittle piece.
- Higher moisture or humidity — softens the surface and can make pieces tacky, which is why water activity and packing matter as much as the recipe.
Speed matters on a real line
Gummies are usually deposited as a warm, still-fluid syrup into starch or silicone moulds. The faster that syrup sets, the faster the line can travel and the cleaner the release. High-Bloom gelatins set at higher temperature and are often preferred precisely for this speed and for a drier, less sticky surface in the starch-moulding step. The developer therefore chooses Bloom partly for mouthfeel and partly for how the piece has to perform in the actual moulding and finishing equipment.
Where different sources fit
Most classic gummies use a high-Bloom bovine (beef) gelatin or, where cost and local preference allow, a porcine one; where halal or kosher certification or a clean-label story matters, bovine and fish gelatin are the usual routes. Each source gels slightly differently — fish gelatin generally melts cooler and can foam more on the surface — so a change of source is never a straight swap and needs re-trialling. As a broad industry reference only — always the developer's own recipe trials decide the final formula — a standard soft texturised gummy might start around 6–10 % gelatin on the finished batch (dry gelatin basis), then be tuned with Bloom and solids.
