What is Bloom strength in gelatin?

Short answer: Bloom strength is the industry-standard number that tells you how firm a gelatin gel will be. It is measured by chilling a standard 6.67% gelatin solution and pressing a plunger into the matured gel; the force in grams is the Bloom value. Higher Bloom = firmer gel. Food gelatins commonly run from about 100 to 300 Bloom, and the right range depends on your application.

How Bloom is measured

The Bloom test is standardised (GME / GMIA method). In brief: a 6.67% gelatin solution is prepared in water, chilled and matured at 10 °C for roughly 17 hours, then a plunger of defined size (12.7 mm diameter) is pressed 4 mm into the surface of the gel. The force required, expressed in grams, is the Bloom value. One gram of force ≈ one Bloom point, which is why “200 Bloom” literally means the gel resisted with ~200 g under those conditions.

Does higher Bloom always mean better?

No. Bloom describes a property, not a quality ranking. A very high-Bloom gelatin can give an overly tough or rubbery gel in a dessert, or set too fast on the line; a low-Bloom gelatin can fail in a gummy that must hold its shape at room temperature. “Higher Bloom = better” is only true when your application genuinely needs a firmer gel or a lower dosage to reach it. Matching Bloom to the product is the whole job of grade selection.

Bloom is not the only number

On a specification sheet Bloom always appears with other parameters — viscosity, pH, clarity, mesh size, moisture — and all of them matter together. Two 250-Bloom gelatins with different viscosity can behave differently in the same recipe. When comparing suppliers, compare the full specification, not just the Bloom headline.
