Short answer: When you buy edible gelatin, check both the functional specifications that control how it performs in your recipe — Bloom gel strength, viscosity, pH and particle size — and the purity and safety specifications that define food grade — moisture, ash, protein, sulphur dioxide, heavy metals and microbiology. The functional specifications that drive performance
These numbers tell you how the gelatin will behave when you dissolve and use it. They are the ones most responsible for whether your finished product comes out the same every run.

The food-grade and purity specifications
These are the “safe and legal for food” specs. Actual limits follow the food-code your market uses, so they appear on the COA as values against a declared limit rather than fixed world numbers.
- Moisture — free water in the powder; above the limit risks clumping and bacterial growth. Edible gelatin is typically around ≤ 10–14 % (supplier and market dependent).
- Ash — mineral residue from raw material and processing; low levels support cleaner taste and clarity.
- Protein (nitrogen) — the active protein backbone, typically expressed via a nitrogen figure; a high-protein, low-additive balance is what makes food-grade gelatin a clean-label ingredient.
- Sulphur dioxide (SO2) — residual from processing; limited to low levels in most food codes.
- Heavy metals — limits for arsenic, lead and others as required by the applicable food additive standard.
- Microbiology — total plate, coliforms, E. coli, Salmonella and other pathogens screened, with each reported against a limit.
Because food-grade criteria differ slightly by region and buyer specification, ask your supplier which food code the COA is written against and confirm it matches the market you export into.
Specifications that support process and claims
A complete data package also covers the things that are not in every recipe spec but matter to merchants and formulators:
- Appearance, clarity and odour of a standard solution — buyers compare actual lots, not just numbers.
- Animal source (bovine, porcine, fish) and any halal/kosher status for dietary and export compliance.

How to read the certificate of analysis (COA)
The COA is the document that turns a brochure into a verifiable lot. A useful habit is to check it in this expected order:
- Identity — does the header say the exact product and grade you ordered, and the batch number?
- Functional values — are Bloom, viscosity, pH and particle size inside the band the supplier quoted and inside what your recipe tolerates?
- Purity vs limits — are moisture, ash, SO2, heavy metals and microbiology all “pass”, ideally near typical values, not just under a cap?
- Date and verifiability — is the test date recent, is the method stated, and can you trace the batch back to a source and recall in the plant?
