Short answer: Yes, gelatin is a core, traditional ingredient in marshmallows. The whipped marshmallow is a foam — millions of tiny air bubbles held in a sugar syrup — and gelatin is the protein that wraps and stabilises those bubbles while the foam sets, so the finished marshmallow keeps its light, springy structure and can be cut, coated and stored without collapsing.

Marshmallow is really a whipped foam

Look past the fluffy look and a marshmallow is a very concentrated sugar and glucose syrup that has been beaten to a light foam, then cooled so it solidifies around all that trapped air. Without a stabiliser, the syrup's bubbles would quickly drain, join together and burst, and the foam would deflate into a wet puddle. Gelatin is there to stop that from happening, and it has been doing the job in traditional marshmallow recipes for well over a century.

What gelatin does in the batch

The gel network also traps water and sugar evenly through the structure, which is what stops a marshmallow from weeping syrup or drying out ragged at the edges during storage.

Type and how much

Most marshmallow work uses a medium-to-high Bloom gelatin, and developers adjust concentration to hit the desired stiffness. A firmer, cuttable slab that holds embossed shapes leans toward more gelatin; a very soft, melt-in-the-mouth version can use less. Type A or B selection follows the preferred source and acid character, and the concentration is usually low in absolute terms relative to the whipped, air-filled final volume — the gelatin acts as a small but essential minority ingredient in a mostly sugar foam. Bloom and whipping together shape the foam

Bloom and concentration decide how stiff the finished marshmallow is, while the whipping process decides how light it is. Two batches with identical gelatin can feel different if one is beaten more: more air whipped in gives a lighter, airier product, and the gelatin has to be dosed or chosen so the foam still sets around that much air. Warming the syrup into the whip

Gelatin for marshmallow is first dissolved into part of the warm recipe water before it meets the hot sugar syrup. If the mix is too hot when whipping starts, bubbles form plenty but the structure stays weak because the network is slow to form while warm; if the batch is whipped too cool, the gelatin may start to set early, giving a grainy or overloaded, hard-to-aerate mass. Source options for marshmallow

Classic marshmallows are built with a beef-source gelatin for its clean, strong, low-taste set. Porcine works equivalently where acceptable, and to meet halal or kosher needs a certified bovine grade is typical, with fish gelatin available where a non-bovine clean-label or certified route is wanted. Fish gelatin whips and sets at slightly cooler temperatures, so a manufacturer switching source must re-run its own trials before trusting the same process window.
