Why peptide powders cake

Hydrolyzed plant protein is a mixture of short peptides, free amino acids and small amounts of residual carbohydrate and mineral, and many of those components attract water. In a dry powder the material sits in a glassy, amorphous state: it behaves like a solid but has no crystal lattice holding it rigid. When it picks up moisture, it passes through a sticky phase before it dissolves. In that window, particles fuse at their contact points, and once the bridges harden the powder sets into lumps or a solid block. Time, stacking pressure and temperature all accelerate the process, which is why a bag that was free flowing in the warehouse can arrive as a brick.

Storage conditions that work

The liner matters more than the outer bag. A multiwall paper sack with a sealed polyethylene liner, or a foil laminate bag, gives a genuine moisture barrier, while a stitched or folded top gives an easy path for humid air. Bulk formats such as bag-in-box and lined bulk bags are common for larger volumes, and the inner liner should be closed after each partial use and the outer container kept sealed. For long storage or very humid climates, a desiccant sachet inside the liner is a practical addition. Damaged liners, split seams and bags that have been left open in a processing room are the usual source of a caking complaint.

Handling in production

Limit how long the powder is exposed. Open bags in a low-humidity room, close them as soon as the portion has been taken, and define a maximum time that a partially used bag may stay in the production area before it is either finished or resealed. Transfer to a day bin only if the bin is covered and its contents are used the same shift. Cleaning also matters: residual moist powder left in hoppers, feeders and screws promotes caking on the next run, so equipment should be dry and clean before the next batch is loaded.

How to tell whether caking actually matters

Caking is primarily a handling problem rather than a safety one, but it needs to be characterized rather than tolerated. Check the moisture content on receipt and after storage, note whether lumps break up under light pressure or have set hard, and confirm that solubility in your process is unchanged. Where a stored lot has taken up moisture, review microbiological results and water activity as well before releasing it, and treat any change in dissolution behavior as a formulation issue rather than a nuisance.
