Short answer: Six plant sources dominate commercial peptide supply: pea, soybean, rice, wheat, corn and walnut. They are not interchangeable, because each source brings a different amino acid profile, allergen status and sensory behaviour. In practice the choice is driven by the claim the finished product needs to make, the clarity and taste the format demands, and the allergen and labelling rules of the target market.

Four questions that do the shortlisting
- What claim must the label support? A plant-based or vegan claim points to any of the six; a cognitive or endurance angle points to walnut or corn; a hypoallergenic angle points to pea or rice.
- What does the format demand? Clear beverages and protein waters need high solubility and low haze, while bars, gummies and bakery items tolerate more colour, flavour and buffering capacity.
- Which allergens can the label carry? Soy, wheat and walnut are declarable allergens in most markets, and cross-contact and cleaning controls matter as much as the ingredient itself.
- Does the nutrition panel need completeness? If a complete protein claim is required, a single source is rarely the answer; a blend is.
Blending to balance the amino acid profile
Most single plant sources are limited in one or two indispensable amino acids. Pea and other pulses tend to be low in methionine, while cereals such as rice and wheat tend to be low in lysine. Combining a pulse source with a cereal source therefore complements the profile without changing the format: pea plus rice is the best known pairing in plant protein beverages, and soy already carries the broadest profile of the six on its own.
Sensory behaviour separates sources as much as nutrition does
Pea protein carries a recognisable beany note in less refined grades, rice protein is generally the mildest, soy can bring a distinct savoury note, wheat brings a slight cereal character, corn is usually neutral, and walnut carries a nutty note that suits some applications and rules out others. Because the hydrolysis process and any debittering step change these impressions, the same source from two suppliers can taste different. Always judge a source on a representative sample of the actual grade, not on the plant it came from.
A practical selection sequence
First fix the claim and the format, then remove any source that conflicts with the allergen rules of the target market, then shortlist one or two candidates whose specification matches the required solubility, molecular weight distribution and taste, and finally confirm the choice in a pilot batch. Keep the source decision separate from the grade decision: the source sets nutrition and labelling, while degree of hydrolysis and molecular weight set behaviour. Confirm all limits and declarations against the supplier certificate of analysis and current local regulations before you commit to a label.
