Peptide, oligopeptide, hydrolysate or isolate: what is the difference?

Short answer: The four terms describe different things. An isolate is a refined protein powder that is still largely intact protein. A hydrolysate is any protein that has been broken down by hydrolysis, whatever the resulting chain length. A peptide is a short chain of amino acids, commonly taken as 2 to 20 residues, and an oligopeptide is the short end of that range. In commercial plant ingredients the words overlap, so the useful distinction is not the name but the degree of hydrolysis and the molecular weight distribution behind it.

Why the words overlap in trade use

In ingredient commerce a plant peptide is a hydrolysate with a controlled and relatively narrow molecular weight distribution, so the same drum could honestly be called both a hydrolysate and a peptide. The words are also used as positioning: hydrolysate emphasises that the material has been broken down, while peptide emphasises the resulting small chain size. Neither word carries a legal chain-length limit in general food use, which is why two suppliers can use the same term for products that behave quite differently.

What a name cannot tell you

A product called pea peptide does not tell you the degree of hydrolysis, the molecular weight distribution, whether the material was fractionated by membrane, how much free amino acid it contains, what the ash and colour are, or how it tastes. Those are the properties that decide whether the powder dissolves clear in a cold drink or throws sediment after retort treatment. The name identifies the family; only the specification identifies the grade.

Peptides are not the same as free amino acids

Hydrolysis always produces some free amino acids alongside peptides, and the proportion rises as hydrolysis is pushed further. Free amino acids contribute to nitrogen and therefore to calculated protein content, but they behave differently from peptides: they are more likely to taste savoury or bitter, and they can raise osmolality in a beverage. If the proportion matters for your formulation, ask for it as a specified value rather than assuming it from the word peptide.
