Yogurt's own structure has a weakness
Yogurt is a milk gel made by bacteria converting lactose to acid, which makes the milk proteins form a delicate curd network that traps water. That network is real but fragile: over time, or after vibration in transport, the curd can contract slightly and squeeze out some of its whey, which shows up as a cloudy pool on top of the cup. This is the single most common texture defect consumers notice. Gelatin is used precisely to head it off.
