Short answer: Edible gelatin is used as a gelling, thickening, stabilising, binding, foaming and clarifying agent in food. Its most familiar jobs are making gummy candies, marshmallows, jellies and panna cotta set into a firm-but-soft gel, but it also thickens sauces and glazes, stabilises yogurt and whipped desserts, binds ham and formed meat together, textures savoury aspics and terrine, and is used to fine and clarify beverages such as juice and wine.
Gelatin does six jobs in food
One ingredient earns its place on so many labels because it performs several textural functions that usually need different additives. Depending on the recipe, the same gelatin can act as:

Confectionery and dessert use
Gummies, jelly beans and wine gums rely on gelatin for their distinctive “chew then melt” bite: the gel is strong enough to hold its shape and snap cleanly, yet the melting point sits just below body temperature so it dissolves quickly in the mouth with fast flavour release. Typical gummy and soft-candy grades run in the roughly 220–280 Bloom range, while softer dessert and mousse textures are typically made with lower-strength gelatins around 100–220 Bloom. Marshmallows need a gelatin with good foaming and stabilising power — usually in the 200–260 Bloom bracket — to hold air in a stable foam as the sugar syrup sets. Panna cotta, milk jellies and gelled desserts use medium grades around 150–220 Bloom so they set firm but remain delicately spoonable.
Dairy and plant-based “milky” desserts
Beyond dessert gels, gelatin brings important stability to cultured and chilled dairy products. In yogurt it helps reduce whey separation (syneresis) and gives a smoother, cleaner mouthfeel that many consumers describe as less “gummy” than starch or gum systems. In whipped toppings, creams and mousses it stabilises the foam and protects the structure against melting and weeping. Even where the final texture seems untouched by gelation, small amounts of low-Bloom gelatin act as a water binder that keeps products creamy through their shelf life.
Meat, poultry and fish products
Gelatin binds and texturises a wide range of protein foods. In ham, formed hams and cooked sausages it glues muscle pieces together so the slice holds, and it traps the free water that would otherwise leak out as purge. In aspic, glazed hams and savoury jellies it provides the classic clear set and sheen over meat, fish and vegetables. In surimi and reformed seafood its cold-gelling behaviour helps hold the block together during shaping and cooking. For these cooked-meat uses manufacturers commonly choose medium-Bloom bovine or porcine gelatins that are robust at the temperatures and salt conditions involved.
Sauces, glazes and bakery coatings
Because gelatin sets on cooling but re-liquefies on warming, it is a convenient texturiser for fruit glazes, pie and pastry fillings, and shine coatings on bakery items. A glaze brushed over a fruit flan or a cake sets to a glossy, transparent finish that does not leave a cooked-starch taste. In low-sugar and reduced-fat dairy and bakery systems gelatin often replaces the body and mouthfeel that fat or sugar would otherwise provide, which is one reason it appears in “light” and clean-label reformulations.
Clarifying and fining beverages
In the right food-grade applications gelatin is a traditional fining agent: a very small dose binds suspended particles of tannin and haze in juices and some wines so they flocculate and settle, leaving a brighter, clearer liquid. Because it is animal-derived, manufacturers using gelatin in this way must state whether the source is compatible with vegan, vegetarian, halal or kosher claims, and label the product accordingly.
Choosing a gelatin by what you make
There is no single “best” grade — the ideal choice depends on the texture, the other ingredients and the processing conditions. As a broad guide, soft set desserts use low Bloom, confectionery gummies use high Bloom for a firm chew, marshmallows need good aeration alongside a medium-high Bloom, and meat binders favour medium grades with reliable water-binding. Suppliers usually publish the gel strength (Bloom), viscosity, pH and ash for each lot on a certificate of analysis (COA), so a food developer can match a grade to the target texture and confirm the source (bovine, porcine or fish) that fits the market.
