What is the difference between Type A and Type B gelatin?

Short answer: The core difference is the extraction route. Type A gelatin is acid-processed and typically made from porcine pig skin, fish skin or some cattle hides; the short acid soak makes its isoelectric point higher, around pH 7–9. Type B gelatin is lime/alkaline-processed and typically made from bovine hide and bone; the weeks-long alkaline treatment lowers its isoelectric point to about pH 4.7–5.4. So the two differ in processing time, in the usual raw-material source, and most importantly in electrical charge behaviour at a given pH. Bloom strength and viscosity overlap fully between the types, so neither is inherently firmer or better.

The two letters mean two processes

Type A and Type B come from the food industry’s shorthand for how collagen was hydrolysed. Type A = acid extraction. Raw material is swollen in acid and then hot-water extracted, a comparatively fast route that suits pig skin especially. Type B = lime/alkaline extraction. The material soaks in a lime bath for weeks before extraction, a slower route that suits the dense collagen of bovine hide and bone. The process broadly follows the raw material: it would be wasteful to force dense beef bone through a short acid soak, and unnecessary to lime-treat soft pig skin for weeks.

Why the isoelectric point matters most

At the level of a finished product the most consequential difference is the isoelectric point, because it controls electric charge at the serving pH. Type A, with a pI in the pH 7–9 range, carries little or no net negative charge in most foods until you climb above roughly neutral. Type B, with a lower pI of about pH 4.7–5.4, already carries a net negative charge in neutral and even mildly acidic foods. Where a gelatin must flocculate, stabilise or avoid clashing with another charged colloid, this one number — not the letter on the bag — drives behaviour. A formulator working with acidic beverages or protein-rich dairy drinks will therefore treat Type A and Type B as different tools.

What is not different

It is worth correcting a common assumption: type does not set gel strength. Two gelatins of identical Bloom, one Type A and one Type B, set gels of nearly the same firmness and melt on warming in the same reversible way. Neither type is “stronger” as a rule — the Bloom figure on the COA, not the letter, carries that information. Likewise clarity, odour and off-taste are properties of the individual grade and its refining, not of the A or B designation alone.
