Why food-grade gelatin is considered safe

Food safety for gelatin rests on three controls working together: the animals it comes from, how it is manufactured, and how the finished powder is tested. Only skins and bones from animals that have already passed veterinary inspection for human food use are accepted as raw material. The collagen is then extracted with hot water — and, depending on the source, a mild acid or lime/alkali pre-treatment — and the process involves sustained heat during drying or concentration steps. Finally, each production batch is released against a certificate of analysis (COA) documenting that it meets purity and microbiology limits set by the buying specification and applicable food standards.

Gelatin is a protein, and the theoretical risk of allergy relates to the animal it is made from: bovine (beef), porcine (pork) or fish.
