How is gelatin dried?

Short answer: The purified liquid gelatin is chilled so it sets into a firm gel slab, which is then cut into strips and dried in a carefully controlled warm-air tunnel down to the low moisture typical of food-grade gelatin, roughly 10 to 14 percent moisture. The dried brittle sheets are crushed and milled to the required particle size and screened to a tight mesh window to give powder or granules.

Drying is the last shaping step

By the time a batch reaches drying, it has been extracted, purified, concentrated and sterilised (see how gelatin is purified). What is left is a warm, concentrated liquid. Drying has one narrow but vital job: to convert that liquid into the dry, stable, millable solid that can be stored, shipped and used as easily as any packed protein. It also quietly preserves all the quality earned earlier — if drying is mishandled, gel strength and clarity can be pulled back down at the very last moment.

Setting: turning liquid into a firm gel slab

The concentrated solution is first chilled so it sets. The slab is then cut into strips — the familiar “sheet” shape of gelatine leaf. This sheet format matters for drying because it exposes a large surface in a thin, uniform layer that loses water evenly and quickly.

Warm-air tunnel drying

The wet gel strips are moved through a warm-air drying tunnel where a carefully controlled stream of heated, low-humidity air removes moisture. Two things are watched closely:

The end point is a low moisture content. Food-grade gelatin is typically dried to about 10–14 % moisture: dry enough to be stable in storage and low enough to meet specification, but not bone-dry, since fully desiccated gelatin is unnecessary and harder to handle. The exact figure is set by the grade and quoted on the certificate.

Milling and screening to particle size

Once brittle, the dried sheet material is fractured — crushed — and then milled to a controlled particle size. Milling is not arbitrary: the fine powder and coarse-granule grades that come off the same process each find different uses, so the sizes are screened through sieves to a tight mesh window that keeps the batch consistent. The screened material becomes the powder or granules in the bag. Particle size is itself a specification point, because it changes how fast the gelatin dissolves in water before use.
