What is the difference between gelatin and collagen peptides?

Short answer: Gelatin and collagen peptides are two ends of the same processing ladder. Gelatin is collagen that has been only partially broken down, so it dissolves in warm or hot water and sets into a reversible gel when cooled. Collagen peptides (often called hydrolysed collagen) are collagen that has been hydrolysed all the way into much shorter chains, so they dissolve in cold water and do not form a gel. Because of this, the two are used very differently: gelatin is a texturiser chosen for structure — gummies, jellies, set desserts — while collagen peptides are a non-gelling protein ingredient typically added to drinks, capsules and fortified foods.
The processing ladder in one look
Both begin as the same animal collagen. The only real difference is how far each one's molecules have been chopped and unwound, and that single difference drives everything else — solubility, gelling and intended use.

Two behaviours that decide the job
Nearly all practical differences follow from two facts you can test in a glass:
- Temperature of dissolution. Gelatin needs warmth to dissolve; sprinkle collagen peptides into cold milk or water and, with whisking, they go in. This is why peptides fit drinks and gelatin does not.
- Gel on cooling. A warm gelatin solution sets into a wobbly, melt-in-the-mouth gel as it chills; a collagen-peptide solution simply stays liquid no matter how cold it gets. If a product must keep its shape — a jelly bean, a panna cotta — only gelling gelatin works.
Nutritionally similar, functionally different
Because they come from the same protein, gelatin and collagen peptides share a collagen-type amino-acid profile, rich in glycine and proline and relatively low in several essential amino acids. Compared head to head as protein, gelatin is generally considered a lower-quality protein than some other sources, and collagen peptides are typically the ingredient chosen when a formulator wants a tasteless, clear protein boost that dissolves easily and does not alter texture. If the goal is purely to add body-forming protein to a drink, collagen peptides are the usual answer; if the goal is to give a food structure and a solid gel, gelatin is required.
Choosing between them
Rather than asking "which is better?", ask "what must the product do?"
- Aim for structure — a gummy chew, a jelly, a set dessert, a firm mousse — choose gelatin.
- Aim for cold-soluble protein in a clear, liquid, shake or powder supplement with no gel — choose collagen peptides.
- On a datasheet, ignore the label and read the specification: gelling or non-gelling, cold- or hot-water soluble, plus the molecular-weight range, will tell you which end of the ladder the ingredient sits.
